If you prefer to really take your time and get down to the nitty gritty details, FL Studio supports that better, for me at least. The way I see it is like this: If you prefer to do a lot of experimentation on the fly, Live is right for you. Perhaps I'm biased because I started out with FL Studio (if I don't count the short time with LMMS) but for me I just love every little thing about FL Studio. With that being said, its stock plug-ins are rubbish (besides vocodex which was brilliant). This flexibility is a godsend for the most selective producers, as it allows you to build your workflow from the ground up and maximize it for your specific needs. To be honest I miss Fruity Loops for its exquisite layout and the quick editing tools. FL Studio is much more customizable than Ableton Live and, in general, includes more features and flexibility for music producers. So I finally caved in and got the new FL Studio (which is my favorite, out of 9, 10 and 11 because of the new plugins that are pretty nice, like Harmor) and after just one week with my old baby back I made one of the best songs I've ever made. FL Studio wasnt compatible fully so I made the switch to Logic Pro and Ableton Live. The only thing I really preferred with Ableton is the ease of tweaking audio clips. But after a year of playing with it I couldn't get the thought out of my head "I miss fruity loops!" I like the plugins (effects mostly) better in FL, the piano roll and all the little tricks you can do in it, the pattern arrangements, the mixer, the "feel" of it, and it all just makes more sense to me. Setting up MIDI CCs would is also less than desirable. For starters, I haven't been able to rack the VSTi and automate synth parameters which are exclusive to FL. While the VSTi version of FL inside of Ableton Live is a nice option, it's just not the same as having Harmor as a separate VST. Indeed it is great, and there are certain things about it that I like more than FL. I tried the FL Studio 20.6 demo recently on MacOS. I used FL Studio for a couple years before my computer crashed and when I got a new one I decided to try Live instead because of all the great things I've heard about it.
